Salsa Pork Chops (or Chicken Breast)

I made these last week and it was a big hit, plus it seems pretty healthy too.

Salsa Pork Chops

Pork loin chops (I used 8)
Mushrooms (optional)
Jar of Salsa

Brown pork chops and mushrooms in frying pan or electric skillet. Put them in a baking pan. Pour salsa on top. Cover with tinfoil. Bake at 300 for 45-60 mins. Serve with whatever you want. We had rice. Yum.

I think you could use chicken breasts and do the same thing, but you might want to raise your oven temp to 325 and check if they are done at 40 minutes.

Well, two weeks in and we are doing pretty good. Some of us are facing some challenges, but all in all we are doing great! Shout out to Dad, who somehow lost a whopping 7 POUNDS this week. Way to go Dad!

I don't know about everyone else, but the exercise being double points was very good motivation for me this past week. I feel great, having more energy from working out! Keep up the good work everybody.

Workout Music





Since this week's double points challenge is exercising I thought I'd write this. Do you listen to music when you exercise? When I use my videos they have music on them so I don't have to worry about it but when I am running I find it a lot easier to do if I am listening to something fast paced that keeps me moving! One of the apps I use while running, the Nike app, allows you to set what's called a power song for that time in your workout when you think you are running out of steam and need a pick me up. My power song is Headstrong by Trapt. To be honest I don't know what the song is about or if it makes any sense overall but I chose it for two reasons. It is fast paced and the words in the chorus really push me to keep going. After I had Brady I had a really hard time accepting the complications that came with my pregnancy. I had to be on medication for my blood pressure for 6 more months, my heart still skips beats and I constantly worried about my health. And to add to that I was pretty unhappy with how much weight I have gained over the past few years. So I decided to finally do something about it. And the words of this song's chorus really spoke to me. It says...

I basically relate it to all my issues that resulted from my pregnancy and my weight and tell myself that I am headstrong and will take these things on and push past them and improve. I did get to go off all medications just before Christmas and my blood pressure is finally back to normal, and I am slowly losing weight! My heart beat is still irregular sometimes, but I try not to think about it. So now that my sap story is done the point of this post was to find out if any of you have songs that you like to work out to or a specific power song that has helped to push you along. If so please share! I am always looking for new running music!

Weight Watchers Skillet Lasagna

I made Weight Watcher's Easy Skillet Lasagna for dinner last night, and I thought it was delicious. The boys enjoyed it as well! The best part is, it is only 275 calories per 1 cup serving. If you eat that, with some salad and a piece of garlic bread or toast, it makes for a pretty good meal! I hope you give it a try. You can find the recipe here.  Have a great day!

Most everybody had a pretty successful first week! Let's see if we can keep it up for the next 7 weeks. Was I the only one who found it a little difficult to fit everything in on Fast Sunday? **For those of you on myfitnesspal, you may be wondering what is up with my weight fluctuation. Our scale wasn't working right, and we figured out how to reset it, so things should be good from now on! My alleged 3 pound weight loss was actually only 2, which is still pretty good!
